Pasilla-Ancho Chile (Chile Pasilla Ancho), also known as Chile Pasilla Rojo or simply Ancho Chile, is one of the most widely used dried chiles in Mexico. In the fresh form, this chile is a Poblano, which is left on the plant to ripen to a red color before being picked and dried.
